Hi there,
Is there a way for me to check wich mail messages were changed since the last time i checked/synchronized from the server (Gmail or Outlook)?

IMAP itself doesn't offer any direct ways for that. You need to maintain list of UIDs and compare it between sessions. You can use Imap.Search method to get list of message UIDs for current folder. You might also check flags status, that's done with Imap.DownloadEnvelopes method and is explained here.

Just one more question, is there any identifier for folders? For example, if I have Folder1/Folder1.1 and Folder2, and then move the Folder1.1 to Folder2/Folder1.1 (on the browser). How can i know if that's my old Folder1/Folder1.1 and not a new Folder2/Folder1.1 different from the previous?

No such thing unfortunately, but there might be a way to determine if you're dealing with the same folder by checking FolderStatus and getting its UidValidity value which is usually the same across sessions. I am saying "might" here as the approach isn't really 100% reliable.
